Description
Most vegan meat substitutes call for ingredients like texturized pea protein and other modified food substances. I'd rather avoid that since the science is so strongly in favor of whole foods.
This Walnut Meat is made of whole foods, and can take the place of ground beef in pasta, tacos, nachos and more. The flavor is right, and it's just as satisfying as real meat. But note that the texture is crunchy from the nuts, so the substitution will be more noticeable in soft dishes like pastas than it will be in crunch dishes like nachos or tacos.

Prep the Ingredients
Soak the walnuts overnight to release the phytic acid. Drain and rinse.
Brown the onion and mushrooms on the stovetop. Press in paper towels to squeeze out the extra moisture.
Add the mushrooms, onion, walnuts and spices/flavorings (oregano, soy sauce, olive oil, cumin and garlic) into a food processor.
Pulse until you reach desired texture, mixing and scraping sides periodically.
