Nacho Cheese (“Queso”)

You won’t believe how easy and delicious this vegan nacho cheese is – made fully from whole foods (no nutritional yeast required!). Adapted from veggiesdontbite.com.

A quick, easy and wholesome nacho cheese made out of cashews and vegetables.

Ingredients

Vegetables/Nuts

Spices/Flavorings

Instructions

  1. Cook Vegetables/Nuts in Instant Pot

    Soak the cashews overnight for creamiest results.

    Cook all vegetables/nuts (potatoes, pepper, carrot, onion, cashews) in Instant Pot with 2 cups of water for 5 minutes.

    Quick release when complete

  2. Blend

    Drain out the water.

    Place all vegetables/nuts in the Blender, along with spices/flavorings (miso, mustard, paprika, salt, lemon).

    Blend on high until smooth
