No Compromises Nachos

These nachos are what I think of as "no compromises Vegan" - when you're eating such delicious food that you didn't have to give anything up to eat Vegan! The keys to these nachos are the "queso" made of cashews and vegetables (no nutritional yeast!) and "ground beef" made of walnuts and mushrooms. Both recipes are Whole Foods - no processed junk involved! We served these on New Years, and even the adults thought they tasted just like the meat and dairy versions!

Simply layer together tortilla chips (I like to get lime flavored), your favorite guacamole and salsa, beans, olives etc. with the following:

  • "Queso" - recipe here. You probably don't need the whole recipe, so you can just use the leftovers for cheesy pasta or keep frozen
  • "Ground Beef" - recipe here. This one tends to take on the character of whatever dish it's in, so you might use half the recipe for nachos and dump the rest into a spaghetti or tacos the next day, without getting tired of it.

I don't even understand why it tastes exactly like real nacho cheese when it's just a bunch of vegetables and nuts blended together. The ground beef, adapted from Charity Morgan's Walnut Chorizo, is satisfying like real meat and blends in well in these nachos.
