No Compromises Pizza

This pizza is fully vegan and wheat-free, but it doesn’t taste like a compromise. My kids love this as much as regular pizza, but it won’t hurt their tummies, thanks to an Einkorn crust and cashew-based mozzarella. It does take a few steps, so this is more of a weekends and holidays recipe for us!

Makes 2 pizzas

The challenge of pizza is the crust and cheese; wheat-free crusts generally have chemicals of some sort (gums/emulsifiers), or are otherwise gummy and flavorless. This Einkorn crust, from Carla Bartolucci's New York-Style Pizza, tastes just as good as regular wheat crusts, and is made of nutritious Einkorn!

Dairy-free cheese also usually contains chemicals or is made of flavorless, nutritionally empty ingredients like refined oils and starches. This cheese, from Veganricha.com, is made without nutritional yeast, and is made of whole foods like cashews.

Instructions

Crust

  1. Prepare the Dough

    Mix the water, yeast, and 1 cup of flour. Wait 15 minutes; mixture should be bubbling.

    Add the other 4 cups of flour and mix as able. Knead 2-3 minutes, fully incorporating the flour. Cover with lid or plastic wrap.

  2. Wait 2 Hours

    Dough should rise about 30%

Make the Cheese

  1. Blend the ingredients

    Add all mozzarella ingredients into the blender, blending on high until smooth

  2. Cook blended batter on stovetop

    In a pot or saucepan (stainless steel), cook the blended cashew cream over medium, until thickened (about 5 minutes).

    Remove from heat and set aside in a bowl until ready to assemble the pizzas

Assemble the Pizzas

  1. Prepare to Assemble

    Preheat the oven to 500 degrees. Place 2 unlined baking pans or pizza stones in the oven to preheat (ideally for 30 minutes)

  2. Form the Crusts

    Divide the pizza dough into 2 halves, rolling each into a ball.

    Set each ball on a piece of parchment paper, heavily dusted with Einkorn flour. Stretch each ball into a large, thin circle, with a thicker edge.

  3. Complete Assembly

    Remove the pans from the oven. Place each crust onto a hot pan.

    Spread each crust with half of the pizza sauce.

    Place dollops of cheese on top of the sauce. Spread out the dollops of cheese as desired to fully cover the pizza.

    Add any remaining toppings as desired.

  4. Bake

    Bake for 10-12 minutes, until the crusts and cheese are beginning to brown.
